French Onion soup is a soup that is enjoyed by many people. Even vegetarians can enjoy this soup. This is a great recipe for vegetarian French Onion soup.
To make this soup the following ingredients are needed:
5 sliced onions
1tb minced garlic
6 cups vegetable stock
1/3 cup dry sherry
6 slices of sourdough bread, toasted
2/3 cup shredded Gruyere cheese
To make this soup start by heating the butter and the oil in a pan. Add the onions, garlic, and salt. Allow this to cook for 5 minutes. Reduce the heat. Simmer for 1 hour until the onions are brown.
Add the flour. Cook for 3 minutes. Add the vegetable broth ,sherry, and mustard. Simmer the soup for 15 minutes. Put the soup in individual bowls that are heat proof. Top with a slice of bread and the cheese. Broil 2 minutes until the cheese is bubbly. Serve the soup while it is hot.
